Our very own Texas reds fest

When bakingupchaos and I lived in College Station, Texas one of our favorite annual events was the Texas reds festival. We weren't able to make it this year so we decided to hold our own in spirit (plus I got to watch the Texas A&M game). We started by finding the right bottle of red wine, amazingly enough we found a Texas reds label Messina Hof wine locally. It is a blend of 60% cab sav 20% merlot and 20% cab franc.

Next, we had to have steaks, I seasoned them with our house seasoning. Our house seasoning is 1 cup salt, 1/2 cup garlic powder, 1/4 cup black pepper & 1/4 onion powder.

We were out of gas for the grill and I didn't have the energy to mess with the charcoal so I decided to use my cast iron in the oven. If you do so preheat the over to 400 and put the cast iron to heat in the oven. When you are ready to cook your steaks pull the cast iron out of the oven and since its hot, it will give you a good sear on your steaks.

You can't live on steak and wine alone, (but I'd sure like to try) so we made a cheese wonton appetizer and a side of roasted potatoes. For the appetizer take full size wonton wrappers and roll cheese sticks inside them. Bake at 350 until the wrapper is brown and crispy.

All in all we had a good night celebrating the festival on our own!

The only thing that would have made that night better would have been more of that awesome wine and some Salerno sauce. Yummy!!!
